What Exactly is Gluten?

Celiac and Wheat Belly, Gluten Intolerance

Many of you are jumping on the gluten free bandwagon in the hopes of losing weight and many books as well as products are now touting the "gluten free" lifestyle.  You feel better, you look better and weight loss is inevitable due to the omission of wheat.


Is there merit to this?  Are you celiac, allergic or just sensitive to wheat, or is it gluten?  What is gluten? Gluten is the protein found in the grains of wheat, spelt, rye, kamut and even oats. Oats are gluten free, except they are generally processed in the same facilities that process the other grains.  The protein can cause inflammation in the intestinal tract and this damage can result in malabsorption of nutrients.  Essentially you end up "starving".  Symptoms can be bloating, gas, cramping, osteoporosis, anemia, cough, fatigue, and the list is very long.   Celiac disease is a life long dietary commitment as damage of the intestinal tract can be repaired but not ever to the extent of being able to consume it again. This is an autoimmune condition. 


What are the options for those that want to omit gluten?  Rice, gluten free oats, amaranth, quinoa, teff are the grains one can consume with ease as they are gluten free.  Cooking or baking with them can be challenging as they are not considered a direct conversion from wheat. The finished product changes in its consistency and result as well as often taste.

How is weight affected?  When one is sensitive to wheat, which is now genetically modified and the gluten content has increased by 400% in the last 50 years.  The body has a hard time in breaking down this protein and it is bombarded on a daily basis, so it becomes an intolerable nutrient. The body becomes inflamed and then swells.  Weight gain, sore joints, lung issues, shall I go on?  You get the picture. Try eliminating gluten and see if you feel better.
